Liver Detox Soup

This excellent liver detox soup is packed full of lemony, zesty flavour. If you have recently finished one of our home liver cleanses ZencleanseFORGIVE, soup is a nice way to reintroduce food, served hot or cold.

The liver is a filter that performs numerous vital functions, so good liver hygiene should be at the top of your list! Your liver is a picture of what you eat.

Recipe

Prep 10 mins / Yield 2-4 cups of soup

Ingredients for liver detox soup

2 medium avocados

2 cups water

2 cups **vegetable stock

Juice of 1 lemon (or lime if you prefer)

1/2 cup cilantro (coriander) leaves

1 inch organic ginger (if you like a little spice!)

1 garlic clove, minced

1 tsp ground cumin

1 stalk fresh basil

1 stalk fresh mint

1 tsp dried or fresh thyme

2 tbsp. fresh parsley

Himalayan salt, to taste

Black pepper, to taste

Instructions

In a blender (if you have a Vitamix and want hot soup, just run on high for 7 mins)

Step 1: Gather all ingredients

Step 2: Add the water (boiling if you want to serve hot) and vegetable stock

Step 3: Add all ingredients into blender and blend until well combined

Step 4: Serve hot or cold. Store in upright container and consume within 2 days.

**Vegetable Stock – home made

Make your own vegetable stock at home by saving all your vegetable scraps, garlic ends, onion skins, herb stalks, etc. Simply keep it all in a large freezer bag until its full. Once the bag is bursting, throw everything into a stock pot, cover with water, bring to a boil and simmer for approximately 1 hour. Cool and strain through cheesecloth into jars. Keep up to a week refrigerated or frozen in freezer bags up to a month.

Other uses for your stock: Add it to anything that calls for water. It gives you a nice warm background flavour. Soups, rice, grains, pasta.
